Easy Meals work for me

Some days I can be quite efficient...

Sometimes, I just don't feel like making elaborate stuff that need lots of preparation and "methodology". So yesterday, I cooked a meal that looks like it took a heckuva long time, but was really fast and easy.

1. Garlic Herb Pasta

  • gravy from a mix satchet - ( took like 5 minutes to make ) with boiled brocolli & baby carrots, with sliced tomatoes on the side.
  • boiling the pasta took like 10 minutes..and while waiting for the pasta, I was making.....

2. Baked Cod


  • brushed with mustard and sprinkled with lemon pepper & paprika & parmesan cheese
  • took 20 minutes to bake in a preheated convection microwave oven which did all the work..and while that was baking, I made..

3. Vegetable Egg Rolls


  • Used a grater and grated half a jicama, a cucumber and used ready-cut/julienned carrots
  • stir fried the veges quickly with some soy sauce, chili flakes, garlic powder & black pepper
  • While waiting for the fish to bake, i let the vegetable cool & wrapped them up in Egg Roll/Spring Roll wrappers
  • Popped the rolls it in the oven after the fish was done, for about 15 minutes.
And while the egg rolls were baking ( and man, they turned out crispy ), I tossed the pasta in its gravy & added the boiled brocolli & carrots to it.

What can i say, I try to multi-task when it comes to making meals and slot things in to do while i'm waiting for other foods to get done...especially now that Henry's taking up so much time, the wedding plans are constantly on my mind and i TRY to study some.

I love the no effort meal preparation. My new favorite is 'disco hummus'

1/2 C. Tahini
1 can chickpeas drained
1 roasted red pepper
3 sundried tomatoes
1/4 C. pinenuts
3 T. olive oil
minced garlic to taste
1-2 t. sea salt

Food process. Serve with pita, garnish with capers, red onions, and feta cheese. Or make sammiches with hummus, garnish and alfalfa sprouts....mmmmm.

Aarrgghh~ I'm feeling hungry now after seeing the pasta and egg roll. Didn't have my breakfast this morning. :( Hey letti, seem like you are goin to be a really nice wife~ Lucky he. :P

This stuff looks so good. But it also does look deceptively easy. I have printed it out, and will attempt it this weekend. The hardest part for me will be the egg rolls, I think. Either I will impress the heck out of my wife, or I'll burn the apartment building down. Thanks! :-)

Henry's cute in the picture:). What's jicama in malay (or malaysian word)? i'd love to cook western dishes, but the ingredients in the books makes me wonder..if it's translated then i'll know.anyway, the food looks yummy!
