I know I told myself
that I had to post more of the Letti Thursday photos even if it was just as a reminder of what I had made for the boys, or as a reference to come back to when I am running out of ideas. ANYWAY, we've been trying to eat healthier for health reasons, and tonight's recipes were from the American Heart Association Cookbook :)

Feeling a little "deflated"
It was business as usual this morning
when Cindy came to pick Jaxon and me up for Bible Class at my FIL's house. However, as we were about to leave for lunch AFTER class, we found out that Cindy's car had a flat tyre. First thing we did was call David for help. My FIL's house is just about 10 minutes away from our house, so David was only too glad to come by to see what he could do.
After a few minutes, Cindy thought that she would get the stroller out of the trunk to stroll Jaxon around while we waited for his daddy to get to us - only to find out that the trunk key was messing up and wouldn't budge in the keyhole. So we couldn't get to the stroller, but more importantly, we couldn't get to the SPARE TYRE either. *shakes head*
Anway, our knight in shining er, workout pants, comes swooping in and takes a look. It turns out that the car had run over a roofing tack or something, that left an imprint and a gaping hole in the front wheel, on the passenger side.
So David whips out his trusty tyre repair kit and air machine thingy, and in no time, the flat was patched and the tyre reinflated. Cindy was QUITE impressed. :) *sigh*, my hero.
It also allowed Jaxon and his Grandad to have some "quality male bonding" moments too, while we waited !
What would we do without our big strong McGyvers? :) Believe me, I'm not usually one for being all pansified and a frail little damsel in distress, but having your guy come save the day for you like that can make you feel like you were just going to melt into a big ol' puddle of silly grins and dreamy thoughts. :)

Crepes and the Census
I really DO have to be more diligent about posting..
but I've had several things on my plate recently, and so I'm giving myself that excuse to cover up the slacking off. :(
Speaking of plate, instead of your garden variety pancakes, I made some crepes today. Yeah.. if I could only figure out how to put the accent mark on the "e". I had to copy and paste THIS "crêpe" from somewhere else.
ANYWAY, they came out pretty good, light and yummy. Next time I've gotta experiment with different fillings and stuff.
Also along the lines of food, I made Chicken Spaghetti Casserole for Letti Thursday today. No photos, though, but I got the recipe from Pioneer Woman, and here's a pic from her website.
Also, we filled out the Census forms and they're going in the mailbox to be sent off in the morning.

Excursion with Grandad
This time, we picked Colorado City.
Our family loves parks, esp State/National Parks, and there was one down in Colorado City called, hey, Lake Colorado City State Park. Surprisingly enough, my FIL and the hubs had both never been there before and so we thought, "why not".
We took the "scenic hilly route" through Nolan and Maryneal, amazed by how many more windmills there were since the last time we were through there.
We didn't go into the park proper, but we drove along the county roads that hugged all around the lake. The lake was down by 10 feet, so it was looking pretty sad in some parts.
Afterwards, we drove around town - it was a quaint town, with many historically marked buildings with some parts of the town on a hill, so it gave me a "streets of san francisco" kind of feeling.
On the way home, we thought we would stop by Sweetwater because the big Annual Rattlesnake Roundup ( and apparently the largest of its kind in the world ) was going on that weekend. It wasn't because we were into rattlesnakes, but it was more out of curiosity. We had heard about it year after year, and I honestly didn't know what to expect, but as we got closer and closer to the Coliseum, there were cars parked along the side of the road from blocks and blocks away, with a huge amount of people in all directions, and an assortment of activities along the way. There was even a fair with games and rides. It had quite the carnival atmosphere going on. Come to find out later that the whole shindig is spread over a bunch of acres with > 30,000 visitors.
We thought better of joining any of the activities and detoured instead to visit one of Walter's friends who lived nearby and had been fellow Iris / Daylily enthusiasts in the heyday of Walter's garden. They now grow the plants commercially and we promised we would be back when they were in full bloom.
Our last "touristy" stop was the National WASP WWII Museum in Sweetwater. The WASP ( Women Airforce Service Pilots ) had just received their Congressional Gold Medals in Washington a few days before, so there was quite the air of excitement in the air.
We stopped by one of the rest areas by the highway for a quick dinner of sandwiches before heading home. I know SOMEONE was glad to stretch his legs after being in a carseat for hours.

It was an opportunity to dress the baby up :P
We were in Navasota, Tx last weekend
attending Walter ( Jaxon's cousin ) 's wedding at Bogart's Casa Blanca. The 6 hour journey there wasn't too bad; we stopped a couple of times to stretch our legs and get some gas, and the little boy even managed to catch 2 naps!
Some of the family had been staying at the Casa, and so when we got there with a couple of hours to spare, we hopped into Grandad's room to freshen up and change our clothes and hang out for a bit.
