Letti Thursday, The Malaysian Edition

It can be quite a challenge,

but yet a lot of fun trying to come up with recipes / menus for The Boys on Letti Thursday. I had made Satay for David before, but not for the FIL and BIL. So that's what we had for Thursday - Chicken Satay with Peanut Gravy/ Dipping Sauce, DIY Nasi Himpit ( Compressed Rice ) and a cucumber / onion relish. The boys enjoyed it and I got to have a taste of home :)



Starting off with generic white rice from good ol' Wally World





Cooked with extra water and stuffed into sandwich bags and stored in the fridge the night before





Right before serving, breaking it out of the sandwich bags and cutting it up into cubes and reheated in the microwave





Voila, home made compressed rice with a pinch of salt and a bit of coconut milk




Chicken pieces marinating in the mix





Skewered and ready for the grill

( I would have made this hotter/spicier but didn't think that would go down well with da boyz )





Served with Cut Cucumbers and Onions in Vinegar





Ta Da
( can you believe that's one whole bag of boneless skinless chicken breast from walmart? )

We went to support Elizabeth's team on Valentine's Day.

Her team had been undefeated all season, and they won on Saturday when we were there to watch the game.

Getting Ready for Baby

I haven't been home in so long,

I wonder if Malaysians have started having wedding and baby registries. They certainly didn't have them while I was still there. Anyway, it makes things sooooo much more convenient and way easier. I used to wonder what new mothers would do with the 15 identical layette sets that they would receive when the baby was born. :) But this way though, seems a little thick skinned and almost shameless. It's almost like it implies, "Here's what I want/need, GET IT FOR ME".

*gulp*

Anyway, I've tried to get my act together and we're registered at Target for Junior. There is no Babies R Us here in Abilene ( even the Toys R Us closed down a couple of years ago ), and the consensus so far has been if there's no Babies R Us in town, the best place would be Target.

So I've tried to register for stuff that I know we will need, and some little luxuries like gym mats etc for Junior. I've also been told to register for stuff that the mommy will need for nursing and like that, so I've tried to include what I can in there. It may not be the best compilation of stuff, but I tried. If anyone drops by the registry and has any suggestions as to what else I might need or what is on there that is absolutely ridiculously redundant, please please let me know.

We didn't have a Letti Thursday this week

David's dad's eyes are not doing too good.

He has macular degeneration, and has been seeing the excellent doctors at the West Texas Retina Consultants Clinic here in Abilene.



They had initially wanted to have him participate in a study , and so, on Monday, David and I went to be with him as they did all kinds of examinations on him to see if he would qualify for the study. THAT took 3 1/2 hours that day. Phew.

They then called him up on Wednesday and told him that because of a heart condition, the doctor decided it would be too risky to put him in the study, but was optimistic that conventional treatment would be promising for the less damaged eye. So we went with him again on Thursday to see the doctor and decided that we would have dinner out after the appointment.

At least I have a menu in my head for next week already :)

So how was YOUR Superbowl Partay?

A bunch of us went over to my FIL's

to watch the Superbowl... Since it was me and David's big idea to get people to go watch the Superbowl at Walter's house on the big screen TV, we ( read: ME ) had to prepare the food.. which was pretty fun, actually.





Anyway, here's what we had, other than the mandatory Chips and Dips :
