Countdown + Panic = Food

I got myself a DaisyPath Counter yesterday...

Daisypath Ticker

and totally FREAKED MYSELF OUT when i saw that I had just a little more than 4 months to prepare for the wedding and how little I had actually gotten done!

All that nervous energy had to go somewhere, so I opened up an Asian cookbook, scoured it for recipes ( to modify ) and ended up with these two dishes for dinner yesterday....

Stir Fried Chicken with spring onions, chinese cabbage and water chestnut in Hoisin Sauce
Tofu, Mushrooms and Green Bean Red Curry

I feel better now

4 months sounds like ample time, but then work always expands to fill the time available :)

Hey keep cooking those delicious looking dishes and you are going to have a Chinese restaurant openning up soon. Don't panic, time is real short, you are only about 3 months behind time, where is the check list? They say time flies when you are in love. Guests list? Hotel accomodation for your mom and dad and lil sis been booked? Invitation cards printed? Hahahahaha..... just kidding.. happy cooking!!!

My sister in law is getting married on the 1st of May. You know how elaborate Malay weddings can be I'm sure. Mine lasted for 3 days/ 2 nights, by the end of the last day I was screaming for the ceremonies to be over.

Those 2 dishes looked so yummy! I think I'm going to make them for dinner tomorrow ;)
